Easy, homemade chunky Salsa

Deliciously, fresh and tasty homemade Salsa!

This is a really super quick and easy salsa that goes great with Fajitas, Chilli con carne or just good old plain tortilla chips.. It really shouldn't take you any longer than 10 minutes to prepare and make and you'll love how fresh it tastes in comparison to the shop bought stuff. 

Now I only have a mini chopper at the moment so the chopping is split in to parts - if you have a bigger one, by all means throw all the ingredients in one go. I would however suggest doing the tomatoes on their own though depending on how chunky you like them. 

First off you'll need to peel one garlic clove.

Then you'll need to top and tail one medium sized red onion and cut it in to eighths. Place these and the garlic clove into a chopper and pulse until roughly chopped. You could also add some fresh chilli - half a whole one with the seeds removed - at this point if you like. I've left it out on this occasion as I was pairing the salsa with an already spicy Chilli con carne. 

Now you can cut the tomatoes in to quarters and pulse in the chopper until they are fairly small chunks and add them to the onion and garlic. 

Finely chop some coriander (including the stalks) and combine with the tomato mix. Squeeze in the juice of half a lime (add more to taste) and season with salt and pepper. 

Now tuck in and enjoy! 

Ingredients List:

  • 6 x ripe Tomatoes
  • 1 x small Garlic Clove
  • 1 x Lime - you may only need the juice of half but sometimes they aren't the juiciest so always have a couple extras just in case
  • 1 x medium Red Onion
  • Handful of fresh Coriander 
  • Salt and Pepper
  • Optional: half a deseeded fresh Red Chilli
